RECIPES FROM MOM
By Lisa Cooper Laughlin
(taught by Helen Cooper Burns)
Fall is a good time to eat,
Making me envision a yummy treat.
Seeing some of mom's desserts in my head,
wanting something sweet before going to bed.
I sneak into the kitchen and what do I smell?
I hurry up cause It's hard to tell.
I smell cinnamon and apple pie?
There's something in the oven is why.
I open the oven and what do I see?
Apple dumplings just for me!
Mom's Apple Dumplings
Peel and core apples, seeds and all
until middle is hollow. Before wrapping apples, put 1/4
tsp butter, 1 tsp sugar and 1/4 tsp cinnamon inside
hollow core. Next, wrap in pie crust and pinch top to
hold together at top of apple. (You can use pre-made pie
shells to save time, just cut them to fit.) Bake in
preheated oven 350 degrees for 45 minutes or until
golden brown.
As soon as you pull the dumplings from
the oven, pour carmel topping over top. Serve with ice
cream.
