RECIPES FROM MOM

Father's Day is dedicated to my dad.
You still loved me when I was bad.
You never raised your voice or your hand.
I could talk to you, I knew you would understand.
You made us feel so special in your own way.
Wow, you still do that every day.
I've learned so much from watching you.
You let me learn by showing me what to do.
Sitting with me while I learn to drive,
You let me mature as I begin to thrive.
You watch me become a woman as I became mom.
You love my children, as you became Papa Tom.
I Love you dad, Happy Father's Day.
And Cooper, for a father, you are OKAY!

Dad always loves what I fix for him but oh how he loves livers!

Fried Chicken Livers

Rinse the livers. Use 2 cups flour, adding salt and pepper (2 tsp. each) and mix well. Roll each liver in flour mix. Place each one in skillet of hot grease. Make sure you don't crowd them to get a good crispy liver. Cook for 10 minutes before turning. Only turn once. Add slices of onion (if you like) and let simmer for 15 minutes. Drain on paper towels before serving. Tender inside, crispy outside!

Baked Beef Liver and Onions

Rinse liver and roll in above flour mixture, fly until brown. Place in baking dish. Place onions slices on top. Make gravy off grease you fried livers in, using 1/2 cup flour to thicken, then add 2 cups water to make a thin gravy. It will thicken as it bakes. Add salt to taste. Bake for 30 minutes. Happy Father's Day! It's all about Dad!
