RECIPES FROM MOM

By Lisa Cooper Laughlin
(taught by Helen Cooper Burns)

Another early morning on September eighth.
A baby is on the way and I can't be late.
Again I'm gonna be a grandma and oh what a joy.
This time a little different, it's gonna be a boy!
Erica is excited with the baby on his way.
Finally, he is going to be born today!
We'll have to buy tractors and tools for his toys.
Things that make the difference in girls and boys.
We'll bring him home and dress him in bibs.
I'll have to wait to hold him since granny Helen called dibs.
He is born with Erica's nose and chin.
Grandma says, "hey little man, your life is about to begin".
Mommy will bathe you every day.
She will give you hugs and kisses and love you in every way.
A diaper change and a bottle, she'll make sure you're fed.
She'll put you in pajamas then put you to bed.
Sweet dreams Landon, goodnight.
For such a little man, you are alright!

Mom's Peanut Butter Cake

2-1/2 cup self rising flour
1- 1/3cup sugar
1/2 cup peanut butter
1 cup milk
2 eggs
1 tsp. vanilla
1/2 cup shortening

Sift together flour and sugar together. Add shortening, peanut butter, milk, and eggs. Beat well. Bake at 350 degrees for 35 minutes.

Frosting:

Cream together 1tsp. shortening with 1/3 peanut butter. Add 2-1/2 cup powdered sugar. Blend well. Add 1/2 tsp. vanilla. Add a little water to thin if needed to spread easy.
