RECIPES FROM MOM

By Lisa Cooper Laughlin
(taught by Helen Cooper Burns)

The storm set in at the at the end of the day.
I had no idea it would end this way.
It was hot outside when I left from work.
I had no idea a storm was starting to lurk.
I first heard it, as the wind ripped the tin.
As I saw the roof blowing in the wind.
The rain was pouring down hard outside,
The storm was no longer trying to hide.
As it tore through Elizabeth leaving it's mark.
Trees down, scattering limbs and bark.
Electric lines in the road causing traffic to stop.
Traffic was soon rerouted by our local cop.
Bolts of lighting lit up my eyes
The loud claps of thunder was no surprise.
It only lasted minutes then cleared away.
But the town of Elizabeth was damaged that day.
But the community once again gathered around.
Helping each other feeling safe and sound.
Emergency services were totally prepared.
Risking their lives because they cared.
EMT and the fire department awaiting a signal of distress.
As the State road was ready to clean up the mess.
The utility companies repaired phones, electric and gas.
Thanks to you all for clearing it fast.

If ever you are without gas or electric you can always use an outdoor grill. Here is a good idea for a nice side dish.

Mom's Grilled Taters

Use a sheet of foil per serving, cut up one whole potato for each serving, add 1/4 of onion, 1 cup of baby carrots, 1 tsp butter, and salt & pepper to taste. Grill for 1 hour then add cheese of your choice.
