RECIPES FROM MOM

Memorial day has passed again here.
Memories of those we hold dear.
Traveling home doesn't happen oft’ enough.
Long trips home sure are tough.
The long weekend you've looked forward to,
Flies by faster than you knew.
You've seen aunts and uncles, and each kid.
Hugging our parents like we always did.
Sitting with our grandparents talking about the old days.
Helps understanding why we do things certain ways.
Papa pulled up onions and lettuce from the garden bed.
Grandma made sure everyone was fed.
Let's try her recipe from her garden in the spring.
And see what else the meal can bring.

Mom's Wilted Lettuce

When I asked mom for the exact recipe, she made it to taste, like this:

Cut and wash fresh lettuce from the garden (a large bowl, it will wilt a lot.) Cut and wash fresh onions from the garden (4-6 and cut into 1/2 inch pieces). In a small sauce pan add 1 cup water, 1/2 cup vinegar, 1/2 cup sugar (substitute Splenda if you don't use sugar).

Let boil, and add 4 teaspoon bacon grease (you can crumble bacon to salad to add flavor). Add a pinch of salt and pepper -- about 1/4 teaspoon. Also you can add 1/4 teaspoon garlic/garlic powder. After boiling, pour over salad and mix. It will shrink the lettuce.

What a wonderful and tasty fresh dish from the garden!
